Plant-based bowls are easy and delicious.  This is a recipe from my Plant-Powered Academy cookbook.  Like all the other recipes in my cookbook, the Asian Noodle Bowl is simple, fast to make, and full of flavor and protein.  The recipes are all designed with plant-based athletes in mind. Enjoy!

Asian Tofu Bowl

Plant-Based Noodle Bowl Ingredients

  • Smoked tofu, sliced
  • Buckwheat soba noodles
  • 1 cup Shiitake mushrooms, sliced
  • Bean Sprouts to taste
  • Shredded Carrots (you can buy them shredded to save a step)
  • Black sesame seeds
  • 1/2 red or orange bell pepper, diced
  • Garnish with black sesame seeds

Peanut Sauce:

  • 4T peanut butter
  • 2T tamari or soy sauce
  • Juice 1 a lime
  • 2 tsp chili garlic sauce
  • 2 T water

Dry fry smoked tofu over medium-low heat in a nonstick pan. Cook soba noodles to instructions on the package- it’s quick! Saute shiitake mushrooms in water after your smoked tofu is heated. Construct your bowl and enjoy! Put all ingredients for the peanut sauce in a food processor.  Add the peanut sauce to your bowl. You can double or triple the peanut sauce recipe and store it in the fridge.
